I’ve read Nigel Slater‘s Observer articles for years but can’t remember ever actually following any of his recipes. (I don’t cook much, no.) This shameful shortcoming has now been remedied: I give you butter beans with mustard and tomato.
Eaten with quinoa and spinach, plus grated carrot, this was lovely and filling. I halved the recipe, left out the onions (again, because my tummy is not a fan) and made all sorts of substitutions, but out of necessity rather than inspiration, so I won’t give you my adaptation. Go to the original recipe instead. Excellent for cold weather.
